Meet Iain Ganson: Thames Lido’s New Head Chef 🔹 In the beating heart of Thames Lido, a culinary maestro is spearheading a food revolution rooted in authenticity, process, and a love for all things delicious. Meet Iain Ganson, a familiar face to locals from his remarkable stint as the chef co-owner at the Bell Inn at Waltham St Lawrence, and the man stirring the pot (quite literally) at our esteemed kitchen for the past few months. We finally convinced him to swap his butchers knife for a microphone in a quick interview, delving into his history and his plans for the Lido kitchen. -From Childhood Memories to Kitchen Realities-As a young boy from Nairn, Scotland, Iain’s senses we’re locked into the rhythm of home-cooked food, a medley of steaming winter stews, and the comforting aroma of mince browning in the pan. Although a career in the kitchen was not initially on the cards (stuntman was the dream), working in kitchens from the age of 14 ignited a love for the process and hustle of culinary arts. Under the guidance of the meticulous Sam Ng in a university-time job in a Chinese restaurant, Iain found his calling amidst the clanging woks and orchestrated chaos, “THAT is what I want to do”. -Culinary Creations Rooted in Authenticity-A self-confessed aficionado of steak, chips, and buttered toast – “it’s all about the toast” – Iain’s approach to cooking is simplistic yet profound. His indispensable trio in the kitchen includes ‘salt, interest, and time’, aiming to bring dishes to life that resonate with authentic flavours.Iain steers clear of over-complicating things with ingredients, emphasising the need to understand ‘why’ a particular ingredient is being used, allowing it to shine naturally and deliciously.-Sourcing the Seasons at Thames Lido-Ethically sourced, seasonal ingredients remain the lynchpin of Lido’s philosophy, a vision Iain passionately upholds by translating fresh produce into irresistible dishes.
